Endive, Radicchio, and Mushroom Salad

  • 3 endives
  • 1 medium head radicchio
  • 2 cups sliced white button or cremini mushrooms
  • 1/2 cup coarsely chopped walnuts
  • Juice of 1/2 lemon
  • 1 Tbs olive oil
  • salt and pepper to taste
  1. Chop greens and place in large salad bowl.  Add mushrooms and walnuts and toss well.
  2. Comnine lemon juice and oil.  Drizzle over salad and toss gently.  Season with salt and pepper.
