light, creamy kohlrabi & zucchini soup
Ingredients:2 tbs butter1 medium onion2 cups zucchini, chopped1 1/2 cups kohlrabi bulbs peeled and chopped2 cloves garlic, diced2 1/2 cups milk (can be anything from skim to whole)2 1/2 cups stock or broth1 bay leafsalt and pepper to tasteMethod:Melt butter in pan, add onions and cook on low until soft. Then add kohlrabi and zucchini and cook for 5 minutes.Add milk, stock, bay leaf, and garlic and bring to a boil. Cook on low for 20 minutes or until kohlrabi and zucchini is soft.Turn off heat and let col (5-10 min). Then blend add in batches in blender. Then serve!
