Zucchini and other summer squash

Zucchini is the butt of many jokes and stories, so prolific and plentiful does it become in late summer.  While this may be somewhat deserved, it is actually a wonderfully versatile vegetable, with no strong taste of its own it can take on whatever flavors you'd like while adding color and substance.  You can grill it, saute it, bake it, shred it, play baseball with the largest ones (we had to get at least one giant zucchini joke in here).  Here are a couple of our favorite squash and zucchini recipesSummer Squash BreadRatatouilleLight, Creamy Kohlrabi and Zucchini soup
